The 141 seems a bit raw, and more full-bodied. I like that sound on rootsy music, where there aren't a lot of instruments competing.
The SM-81 seems crisper, more polished, scooped out a bit, with a little peak in the high mids, so it would likely fit better in a busy pop mix.
Naturally, my speakers might affect the way I'm hearing them.

I'm going to cast my vote for the SM 81 on this one.

I'd choose the SM81 if it were a more moody or atmospheric track (such as a ballad, or a 'sensitive acoustic guitar indie film soundtrack' thing), or if it were a texture or rhythmic layer in a fuller mix where it wasn't the focal point. The 141 seems to have a more agressive midrange, so I'd use that if the guitar were the focal instrument to push it forward in the mix, or for a more uptempo / brash guitar part than I'd use the 81 for.

I like the 141, for what it's worth. It felt more real and alive to me. The 81 seemed too subdued to me. I don't know all the fancy recording terms  Like the progression too - hope you use it!
