Hello Dan,
This is a caching issue. I take it you just set your signature recently? The reason that its not in all posts is because the forums do not invalidate the cache for a user updating their profile. All pages that are cached when you update your profile will not have the new signature until the cache gets invalidated.
Cache is invalidated by either posting in that thread, updating the forum settings or invalidating the cache in the control panel:
CP -> Eve -> Utilities -> Cache
Now, to illustrate my point you can see that the page you linked above:
